Ingredients

For the Beef Filling:

1 lb lean ground beef

2 cloves garlic, minced

1 small onion, finely chopped

1 tbsp soy sauce

1 tbsp oyster sauce

1 tsp sesame oil

1 tsp freshly grated ginger

1/2 tsp freshly ground black pepper

1/2 cup bell pepper, finely chopped (choose red or yellow for vibrant color)

1/4 cup green onions, chopped (plus extra for garnish)

For the Blueberry Glaze:

1 cup fresh blueberries (or thawed frozen blueberries)

1/4 cup water

2 tbsp honey or maple syrup

1 tbsp apple cider vinegar

1 tsp cornstarch mixed with 1 tbsp water (this will be used for thickening)

A pinch of salt

For Serving:

1 head of butter lettuce or romaine lettuce leaves

Sliced cucumbers

Chopped cilantro (optional)

Crushed peanuts (optional)

Instructions

Prepare the Blueberry Glaze:

    - In a small saucepan over medium heat, combine the fresh or thawed blueberries, water, honey (or maple syrup), apple cider vinegar, and a pinch of salt.

      - Bring the mixture to a gentle simmer. Cook for approximately 5-7 minutes, stirring occasionally, until the blueberries start to soften and break down.

        - Gradually stir in the cornstarch mixture and cook for an additional 1-2 minutes, or until the glaze thickens to your desired consistency. Remove from heat and set aside to cool slightly.

          Cook the Beef Filling:

            - In a large skillet over medium heat, add the finely chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent and fragrant.

              - Add the lean ground beef to the skillet, using a spatula to break it apart. Continue to cook for about 5-7 minutes until the beef is browned and fully cooked.

                - Stir in the freshly grated ginger, soy sauce, oyster sauce, black pepper, and chopped bell pepper. Cook for an additional 2-3 minutes until the bell pepper is tender.

                  - Finally, fold in the chopped green onions and remove the skillet from heat.

                    Assemble the Wraps:

                      - Carefully wash and separate the leaves of the butter lettuce or romaine. Pat them dry with a paper towel.

                        - Arrange the lettuce leaves on a serving platter. Spoon a generous portion of the savory beef filling into the center of each leaf.

                          - Drizzle the prepared blueberry glaze generously over the beef filling.

                            Garnish and Serve:

                              - Enhance the wraps with sliced cucumbers, additional chopped green onions, chopped cilantro, and crushed peanuts if desired.

                                - Either roll the leaves up or fold them into wraps, and enjoy immediately for the best flavor and texture!
