2 cups cooked chicken, shredded

1 cup pimento cheese (store-bought or homemade)

1/2 cup cream cheese, softened to room temperature

1/4 cup mayonnaise

1/4 cup diced pickled jalapeños (optional, for extra spice)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper, to taste

4 large flour tortillas or wraps

1 cup shredded cheddar cheese

Fresh parsley, finely chopped (for garnish)

Instructions
 

Preheat the Oven: Set your oven to preheat at 375°F (190°C) to get it ready for baking.

    Prepare the Pimento Cheese Mixture: In a large mixing bowl, combine the pimento cheese, softened cream cheese, mayonnaise, diced jalapeños (if using for a kick), garlic powder, onion powder, and a pinch of salt and pepper. Stir well until the mixture is smooth and thoroughly blended.

      Incorporate the Chicken: Gently fold the shredded chicken into the pimento cheese mixture, making sure that all chicken pieces are evenly coated with the creamy blend.

        Assemble the Wraps: Take one tortilla and lay it flat on a clean surface. Spoon approximately one-fourth of the chicken and cheese mixture into the center of the tortilla. Sprinkle a little shredded cheddar cheese on top. Carefully roll the tortilla tightly, tucking in the sides as you go to prevent spillage. Repeat this process with the remaining tortillas and filling.

          Arrange in Baking Dish: Place the rolled tortillas seam-side down in a lightly greased baking dish. For an extra cheesy topping, feel free to sprinkle additional shredded cheddar cheese over the top of the wraps.

            Bake: Place the baking dish in your preheated oven and bake for 20-25 minutes, or until the tortillas are golden brown and the cheese is deliciously bubbling.
