Baked Egg and Spinach Breakfast Wrap

4 large eggs

1 cup fresh spinach, chopped

½ cup cherry tomatoes, halved

¼ cup feta cheese, crumbled

2 whole wheat tortillas

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Preheat the Oven: Start by preheating your oven to 375°F (190°C) so it’s hot and ready for the wraps.

    Sauté the Spinach: In a medium skillet, pour in the olive oil and heat it over medium. Add the chopped spinach and cook for about 2-3 minutes, stirring occasionally, until it’s bright green and wilted. Once done, remove from the heat and allow it to cool slightly.

      Whisk the Eggs: In a large mixing bowl, crack in the eggs and whisk them until the yolks and whites are fully blended. Season the mixture with garlic powder, a pinch of salt, and freshly ground pepper, mixing until evenly combined.

        Combine Mixture: Gently fold the sautéed spinach and halved cherry tomatoes into the egg mixture until well distributed. Add the crumbled feta cheese, mixing carefully to keep some of the cheese intact.

          Prepare the Wraps: Place the whole wheat tortillas onto a clean, flat surface. Spoon an equal amount of the egg and spinach mixture into the center of each tortilla, leaving some space around the edges for folding.

            Roll It Up: Starting from the bottom, fold the sides of the tortillas in towards the center, and then roll tightly from the bottom up to encase the filling securely inside.
