1 pound ground chicken

1 cup Italian-seasoned breadcrumbs

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese, plus extra for topping

1/4 cup fresh parsley, finely chopped

1 large egg

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 jar (24 oz) marinara sauce

4 sub rolls or hoagie buns

Olive oil, for greasing

Extra fresh parsley, for garnish (optional)

Instructions
 

Preheat Your Oven: Set your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper and lightly greasing it with olive oil to prevent the meatballs from sticking.

    Make the Meatball Mixture: In a large mixing bowl, combine the ground chicken, Italian-seasoned breadcrumbs, grated Parmesan, one cup of shredded mozzarella, chopped parsley, the egg, minced garlic, onion powder, Italian seasoning, and a generous pinch of salt and pepper. Mix thoroughly until well integrated, being careful not to overmix to keep the meatballs tender.

      Shape the Meatballs: With clean hands, scoop out portions of the mixture and roll them into medium-sized meatballs, approximately 1.5 inches in diameter. Place the formed meatballs on the prepared baking sheet, making sure to leave enough space around each for even cooking.

        Bake the Meatballs: Transfer the baking sheet to the preheated oven and bake for 20-25 minutes, or until the meatballs are fully cooked and reach an internal temperature of 165°F (75°C). They should be golden brown on the outside.

          Heat the Marinara Sauce: While your meatballs are baking, pour the marinara sauce into a small saucepan. Heat it over medium-low heat, stirring occasionally, until it is warmed through and ready to serve.

            Assemble Your Subs: Once the meatballs are cooked, remove them from the oven. Carefully slit the sub rolls open lengthwise, ensuring not to cut all the way through the sides. Place 3-4 meatballs into each sub roll, then generously spoon marinara sauce over the meatballs. Finish with an additional sprinkle of shredded mozzarella cheese on top.

              Melt the Cheese: Return the assembled subs to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly, achieving that perfect golden topping.

                Serve and Enjoy: Once melted to perfection, remove the subs from the oven and allow them to cool for a minute before serving. Garnish with extra parsley if desired for a fresh touch. Serve warm alongside a small bowl of marinara sauce for dipping.
