Ingredients

1 sheet of puff pastry (thawed)

1 wheel of Brie cheese (approximately 8 oz)

1/2 cup cranberry sauce (store-bought or homemade)

1 tablespoon honey

1/4 cup chopped pecans or walnuts (optional)

1 egg (beaten for egg wash)

Fresh rosemary or thyme sprigs (for garnish)

Sea salt (for sprinkling)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure it's hot enough for baking the bites.

Prepare the Puff Pastry: On a lightly floured surface, carefully roll out the thawed puff pastry sheet to smooth it out and slightly thin it. Use a sharp knife or pizza cutter to slice the pastry into squares, each measuring approximately 4x4 inches.

Assemble the Bites: Place one square of puff pastry on a parchment-lined baking sheet. Cut a slice of Brie cheese and position it in the center of the pastry. Top this with about a tablespoon of cranberry sauce, followed by a drizzle of honey and a sprinkle of chopped pecans or walnuts if desired.

Wrap the Brie: Gently fold the corners of the pastry square over the cheese and cranberry filling, pinching the seams together securely to form a sealed package. Ensure that all cheese and filling are fully enclosed within the pastry to avoid any leakage during baking.

Brush with Egg Wash: Using a pastry brush, coat the top of each wrapped Brie bite generously with the beaten egg. This will create a beautiful, glossy finish once baked.

Bake: Lightly sprinkle a pinch of sea salt over the top of each pastry bite. Place the baking sheet in your preheated oven and bake for 15-18 minutes, or until the pastry is puffed up and golden brown.

Cool and Serve: Once baked, remove the bites from the oven and allow them to cool for a few minutes. For an elegant touch, garnish the bites with fresh rosemary or thyme sprigs before serving. Serve warm and enjoy the delightful combination of flavors!
