Ingredients

4 large whole wheat tortillas

8 ounces sliced turkey breast

8 ounces cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup baby spinach leaves

1/2 cup sliced bell peppers (any color)

1/4 cup sliced black olives (optional)

1 tablespoon Dijon mustard (optional)

Salt and pepper to taste

Fresh herbs (like dill or parsley) for garnish (optional)

Instructions

Prepare the Spread: In a mixing bowl, combine the softened cream cheese with Dijon mustard (if using). Stir until the mixture is smooth and creamy. Season to taste with salt and pepper, ensuring it’s well balanced.

Assemble the Tortillas: Place one tortilla flat on a clean cutting board. Using a spatula or a knife, spread a generous layer of the cream cheese mixture evenly over the tortilla, making sure to leave about 1 inch of space at the edges.

Layer the Ingredients: Starting from the spread, add a layer of sliced turkey, followed by a sprinkle of shredded cheddar cheese. Top this with baby spinach leaves, colorful bell pepper slices, and black olives if you choose to include them. Distribute the layers evenly for consistent flavor in every bite.

Rolling Up: Beginning at one edge of the tortilla, carefully and tightly roll it into a log shape. Keep the filling securely packed as you roll. Repeat the process with the remaining tortillas to create multiple pinwheels.

Chill and Slice: After all tortillas are rolled, wrap each one tightly in plastic wrap or aluminum foil. Place them in the refrigerator to chill for at least 30 minutes; this step helps the pinwheels maintain their shape.

Cut into Pinwheels: Once chilled, remove the pinwheel rolls from the fridge and unwrap them. Using a sharp knife, slice each roll into 1-inch thick pieces to create beautiful pinwheel shapes.

Serve: Arrange the sliced pinwheels artfully on a serving platter. For a touch of freshness, garnish with chopped herbs if desired. These pinwheels can be served alongside a side of fresh fruit or crunchy veggie sticks for a perfect, nutritious lunch!
