Ingredients
  

1 pound ground beef or turkey

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 packet taco seasoning

1 cup shredded cheddar cheese

8 small flour or corn tortillas

1 cup sour cream

1 avocado, sliced

Fresh cilantro, for garnish

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil (for cooking)

Salt and pepper, to taste

Instructions
 

Cook the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and minced garlic, and sauté for about 3-4 minutes, or until the onion becomes translucent.

    Brown the Meat: Add in the ground beef or turkey to the skillet. Season generously with salt and pepper. Cook the meat, breaking it apart with a spatula, for about 5-7 minutes or until it is browned and fully cooked through.

      Incorporate Beans and Tomatoes: Stir in the drained kidney beans, black beans, and the can of diced tomatoes (with juices included). Sprinkle in the taco seasoning, mixing everything thoroughly. Allow the mixture to simmer on low heat for about 10 minutes, stirring occasionally to blend the flavors. If the chili becomes too thick, add a splash of water to loosen it up.

        Warm the Tortillas: While the chili simmers, warm the tortillas. You can heat them in a dry skillet over medium heat for about 30 seconds on each side until pliable, or wrap them in foil and place them in a preheated oven at 350°F (175°C) for about 10 minutes.

          Assemble the Tacos: Once warmed, take each tortilla and spoon a generous amount of the chili mixture onto it. Top with shredded cheddar cheese, a dollop of sour cream, and slices of avocado.
