2 cups grated zucchini (approximately 2 medium zucchinis)

1 cup all-purpose flour

1/2 cup whole wheat flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup granulated sugar

1/4 cup brown sugar, firmly packed

2 large eggs

1/2 cup vegetable oil or melted coconut oil

1 teaspoon vanilla extract

1 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a mini muffin tin by lining it with paper liners or lightly greasing it with cooking spray to prevent sticking.

    Prepare the Zucchini: Grate the zucchinis without peeling them. Transfer the grated zucchini to a clean kitchen towel, twist it, and squeeze out any excess moisture. This step will ensure your bread bites maintain a perfect texture and aren’t soggy.

      Mix Dry Ingredients: In a large mixing bowl, thoroughly whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, ground cinnamon, and salt until everything is evenly combined.

        Combine Sugars and Wet Ingredients: In a separate medium bowl, mix the granulated sugar, brown sugar, and eggs together, whisking until the mixture is well blended.
