2 large whole wheat tortillas

1 cup cooked chicken breast, shredded or diced

1 ripe avocado, peeled and pitted

1 cup fresh basil leaves, packed

1/4 cup grated Parmesan cheese

1/4 cup pine nuts (or walnuts)

2 cloves garlic, minced

2 tablespoons extra virgin olive oil

1 tablespoon fresh lemon juice

Salt and freshly ground black pepper to taste

1 cup mixed greens, such as spinach or arugula (for extra crunch)

Optional: 1 cup cherry tomatoes, halved, for a fresh touch

Prepare the Avocado Pesto: In a food processor, combine the ripe avocado, basil leaves, grated Parmesan cheese, pine nuts (or walnuts), minced garlic, olive oil, lemon juice, salt, and pepper. Blend until you achieve a smooth and creamy consistency. Taste the pesto, and adjust the seasoning with more salt or pepper as desired.

    Mix the Chicken: In a mixing bowl, add the cooked chicken. Spoon in a few tablespoons of the prepared avocado pesto and mix well until the chicken is evenly coated with the pesto.

      Assemble the Wraps: Lay the whole wheat tortillas flat on a clean work surface. Spread a generous layer of the remaining avocado pesto evenly over each tortilla, making sure to cover the entire surface.
