Ingredients

2 large tortillas (flour or corn based on your preference)

1 cup cooked chicken, shredded (grilled or rotisserie)

1 ripe avocado, mashed until smooth

1 cup shredded cheese (choose a Mexican blend or sharp cheddar)

1 small onion, finely chopped

1 small bell pepper, chopped (red or green for color)

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and pepper to taste

2 tablespoons extra virgin olive oil

Fresh cilantro, chopped (for garnish)

Sour cream and salsa (for serving)

Instructions

Sauté the Vegetables: In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and bell pepper. Sauté for about 5 minutes or until they have softened and become translucent. Season with salt and pepper to taste. Once cooked, remove from heat and set the mixture aside.

Combine the Filling: In a mixing bowl, combine the shredded chicken, smooth mashed avocado, sautéed onion and bell pepper, garlic powder, cumin, and additional salt and pepper if desired. Mix all the ingredients thoroughly until the mixture is well combined and creamy.

Assemble the Quesadillas: On a clean surface, place one tortilla and evenly spread half of the chicken and avocado filling over it. Sprinkle half of the shredded cheese generously on top of the filling. Place the second tortilla over the top, pressing down gently to seal the filling.

Cook the Quesadillas: In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Gently place the assembled quesadilla in the skillet. Cook for about 3-4 minutes on one side until golden brown and crispy. Carefully flip the quesadilla and cook the other side for an additional 3-4 minutes, adding more olive oil if needed to ensure a perfect golden crust.

Slice and Serve: Once both sides are beautifully golden and the cheese is fully melted, transfer the quesadilla to a cutting board. Allow it to cool for a minute before slicing it into wedges. Garnish with fresh chopped cilantro and serve alongside sour cream and salsa for dipping.

            Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 2
