Scones have a rich history rooted in British cuisine, dating back to the early 16th century. Originally, scones were made with oatmeal and baked on griddles, but over time, they evolved into the buttery, flaky pastries we know today. Traditionally enjoyed with clotted cream and jam during tea time, scones have become a staple in both cafes and homes around the world.

Ingredients

2 cups all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional for extra warmth)

1/2 cup cold unsalted butter, cut into small cubes

1 large apple (preferably Granny Smith or Honeycrisp), peeled and diced small

1/2 cup buttermilk, chilled

1 teaspoon vanilla extract

1 large egg

1/4 cup brown sugar (for a sweet topping)

1 tablespoon coarse sugar (for a sparkly finish)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.

Mix Dry Ingredients: In a spacious mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, salt, ground cinnamon, and nutmeg (if using). Whisk these dry ingredients together until they are well incorporated.

Cut in Butter: Introduce the cold, cubed butter into the dry mixture. Using a pastry cutter or your fingertips, mix until the consistency resembles coarse crumbs with small pea-sized butter pieces remaining.

Add Apples: Gently fold the diced apple pieces into the buttery flour mixture, ensuring an even distribution without mashing the apples.

Combine Wet Ingredients: In a separate small bowl, whisk together the chilled buttermilk, vanilla extract, and egg until the mixture is smooth and homogenous.

Combine Mixtures: Gradually pour the wet ingredients into the dry mixture. Using a wooden spoon, stir gently until just combined. Be careful not to overmix—the dough should look crumbly yet slightly sticky.

Shape the Dough: Transfer the dough onto a floured surface. With gentle hands, pat it into a circle that is approximately 1-inch thick. Use a sharp knife or pizza cutter to lightly score the dough into 8 wedges, making sure not to cut all the way through.

Add Brown Sugar Topping: Evenly sprinkle the brown sugar over the surface of the scone dough, giving it a touch of sweetness and a lovely caramelization as it bakes.

Bake: Carefully place the scone dough on the prepared baking sheet. Bake in the preheated oven for about 20-25 minutes, or until the tops are golden brown and fragrant.

Cool: Once baked, remove the scones from the oven and allow them to cool on the baking sheet for approximately 5 minutes. Then, transfer them to a wire rack to cool completely.

Garnish (Optional): For an added crunch and sparkle, sprinkle coarse sugar on the scones while they are still warm, allowing it to melt slightly.
