Ingredients

4 cups of day-old bread, cut into 1-inch cubes

2 large apples, peeled, cored, and diced (Granny Smith apples add a nice tartness)

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 cup packed brown sugar

4 large eggs

1 cup milk (or any preferred dairy-free milk alternative)

1 tablespoon pure vanilla extract

1/4 cup pure maple syrup

1/4 cup unsalted butter, melted

A pinch of salt

Optional: powdered sugar for dusting

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a standard muffin tin with cooking spray or softened unsalted butter to prevent sticking.

Prepare the Bread and Apples: In a large mixing bowl, combine the cubed day-old bread and the diced apples. Evenly sprinkle with ground cinnamon, ground nutmeg, and packed brown sugar. Gently toss the mixture to ensure that the spices and sugar evenly coat the bread and apples.

Create the Custard Mixture: In another bowl, crack the eggs and whisk them with the milk, pure vanilla extract, pure maple syrup, melted unsalted butter, and a pinch of salt. Whisk until the mixture is well-combined and slightly frothy.

Combine Ingredients: Pour the custard mixture over the bread and apple mix. Using a spatula, gently fold the ingredients together until the bread is thoroughly coated and soaked in the custard. Allow the mixture to sit for about 10 minutes to give the bread time to absorb the liquid.

Fill the Muffin Tin: Using a spoon or scoop, evenly distribute the bread and apple mixture into the prepared muffin tin, filling each cup approximately 3/4 full to allow for rising.

Bake: Place the muffin tin in the preheated oven and bake for 20 to 25 minutes. The muffins are ready when the tops are golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Once baked, allow the muffins to cool in the tin for about 5 minutes. Then, gently transfer them to a wire rack to finish cooling. For an extra touch, dust the tops with powdered sugar just before serving.

Enjoy! Serve your delicious Apple Cinnamon French Toast Muffins warm. Drizzle with additional maple syrup or your choice of toppings for an extra indulgence!
