Ingredients

12 jumbo pasta shells

1 cup ricotta cheese

1 cup shredded mozzarella cheese (reserve 1/2 cup for topping)

1/2 cup grated Parmesan cheese

1 cup spinach, cooked and finely chopped (frozen, thawed, and drained works well)

1 clove garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup marinara sauce (for serving)

1/2 cup breadcrumbs

Olive oil spray for cooking

Instructions

Preheat the Air Fryer: Start by preheating your air fryer to 375°F (190°C). Allow it to warm up for approximately 5 minutes, ensuring it reaches the desired temperature.

Cook the Pasta Shells: Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to the package instructions until they are al dente. Drain the shells and set them aside to cool slightly.

Prepare the Filling: In a medium mixing bowl, combine the ricotta cheese, half of the shredded mozzarella cheese, grated Parmesan cheese, chopped spinach, minced garlic, Italian seasoning, salt, and black pepper. Mix thoroughly until all ingredients are well combined and creamy.

Stuff the Pasta Shells: Once the pasta shells have cooled enough to handle, carefully spoon a generous portion of the cheese mixture into each shell, ensuring they are well-filled.

Coat the Shells: Lightly spray the stuffed shells with olive oil spray. Then, roll each shell in breadcrumbs, ensuring they're evenly coated for a delightful crunch after air frying.

Arrange in Air Fryer: Place the stuffed shells in the air fryer basket in a single layer, keeping them spaced apart to promote even cooking. If necessary, work in batches to avoid overcrowding.

Air Fry the Poppers: Cook the stuffed pasta poppers in the air fryer for about 10-12 minutes, or until they appear golden brown and crispy on the outside.

Serve: While the poppers are cooking, heat the marinara sauce in a small saucepan over low heat. Once the poppers finish cooking, serve them hot, accompanied by the warm marinara sauce for dipping.
