1 cup marinara sauce (store-bought or homemade)

1 1/2 cups shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Olive oil spray or extra virgin olive oil for drizzling

Fresh basil leaves for garnish (optional)

Prepare the Eggplant: Sprinkle the sliced eggplant generously with salt and allow it to rest for 20-30 minutes. This process helps to draw out excess moisture and any bitterness. After 30 minutes, rinse the slices under cold water, then pat them dry thoroughly with paper towels to ensure a crispier texture.

    Set Up Your Breading Station: Take three shallow dishes. In the first dish, add the all-purpose flour. In the second dish, pour in the beaten eggs. In the third dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, dried oregano, salt, and black pepper, mixing them well.

      Bread the Eggplant: Take each slice of eggplant and first dredge it in the flour, gently shaking off any excess. Next, dip it into the beaten eggs, allowing any excess to drip off. Finally, coat each slice in the breadcrumb mixture, pressing lightly to ensure an even and thorough coating.
