4 cups fresh corn kernels (approximately 6-8 ears of corn) or 3 cans of sweet corn (15 oz each), drained

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium potatoes, diced into 1-inch cubes

1 red bell pepper, diced

4 cups vegetable or chicken broth

1 cup heavy cream or coconut milk for a dairy-free option

2 tablespoons butter or olive oil

1 teaspoon smoked paprika

1 teaspoon dried thyme or 1 tablespoon fresh thyme

Salt and pepper, to taste

Fresh scallions or cilantro, chopped, for garnish

Prepare the Corn: If you’re using fresh corn, start by shucking the corn and carefully slicing the kernels off the cob with a sharp knife. Set the kernels aside for later use.

    Sauté the Vegetables: In a large pot, melt the butter or heat the olive oil over medium heat. Add the finely chopped onion and diced red bell pepper to the pot. Sauté the mixture for about 3-4 minutes, stirring occasionally, until the vegetables are softened. Then, add the minced garlic and continue sautéing for an additional minute until the garlic is fragrant.

      Incorporate Potatoes and Corn: Next, add in the diced potatoes and corn kernels. Stir well and cook for an additional 2-3 minutes, allowing the flavors to combine beautifully.
