8 oz (225g) pasta (penne or fettuccine recommended)

1 tablespoon extra virgin olive oil

2 cloves garlic, finely minced

1 can (14 oz) crushed tomatoes

1 cup heavy cream

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional, for a spicy kick)

Salt and freshly cracked black pepper, to taste

1 cup fresh basil leaves, chopped (plus extra for garnish)

½ cup grated Parmesan cheese (plus extra for serving)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to the package directions until it's al dente (firm to the bite). Reserve about ½ cup of pasta cooking water, then drain the pasta in a colander. Set aside.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the minced garlic. Sauté for approximately 30 seconds, stirring constantly until the garlic is fragrant and just starting to turn golden. Be careful not to let it burn.

      Add Tomatoes and Cream: Pour in the can of crushed tomatoes and the heavy cream. Stir well to combine the two. Add the dried oregano, red pepper flakes (if you like some heat), and season generously with salt and freshly cracked black pepper.
